Ingredients:
200g spaghetti
100g pancetta or bacon (diced)
2 large eggs
50g grated parmesan cheese
2 cloves garlic (optional)
Salt & black pepper
Olive oil
Instructions:
Boil salted water and cook spaghetti until al dente. Reserve ½ cup pasta water.
Heat olive oil in a pan, cook pancetta until crispy. Add garlic if using.
In a bowl, whisk eggs and parmesan together.
Add drained pasta into the pan (off heat), mix with pancetta.
Quickly pour egg mixture while stirring to create a creamy sauce (not scrambled).
Add pasta water gradually for smooth texture.
Season with pepper and serve immediately.
